For the patties, you can use white, red, or black quinoa, depending on personal preference. White quinoa, which is the most common type, has a mild flavor and delicate texture, making it perfect for various dishes, including patties. Red and black quinoa have a denser texture and a pronounced nutty flavor. We are preparing vegan patties following the recipe of chef Yevhen Klopotenko.
Rinse quinoa well to remove any bitterness, then combine it with water in a 1:2 ratio and boil for 20 minutes until cooked. Drain in a colander to remove excess liquid.
Dice the onion and grate the carrot. Sauté the vegetables in 1 tablespoon of oil for 5 minutes.
Combine the quinoa with the vegetables, blend the mixture, and add 1 tablespoon of semolina along with curry and salt to taste. Mix thoroughly.
Form the patties, coat each in semolina, and fry in oil until golden brown for 1-2 minutes on each side. Allow to cool slightly before serving.
