Pide is a delicious and unique take on classic pizza, combining thin dough, juicy filling, and spices characteristic of Turkish cuisine. It features a crispy base and a rich flavor thanks to the blend of meat, vegetables, and herbs. Pide is a fantastic option for those looking to try something new and exotic.

Ingredients:

for the dough:

  • wheat flour – 500 g;
  • water (warm) – 300 ml;
  • sunflower oil – 2 tbsp;
  • sugar – 1 tbsp;
  • salt – 1/2 tsp;
  • dried yeast – 10 g;

for the filling:

  • chicken (minced) – 500 g;
  • tomato (large) – 1 pc.;
  • bell pepper – 1 pc.;
  • cheese (any hard type) – 150 g;
  • onion – 1 pc.;
  • butter – 1 tbsp;
  • sunflower oil – 2 tbsp;
  • lemon (juice) – 1/2 pc.;
  • garlic – 2 cloves;
  • tomato paste – 2 tbsp;
  • parsley – 1 bunch;
  • salt and pepper to taste.

Preparation method:

Heat the water to 38 degrees, but not more, otherwise the yeast will not rise. Dissolve the dry yeast with sugar in the warm water. Add olive oil and mix well. Gradually add flour and incorporate salt. Knead the dough until it is soft and sticky. For easier handling, grease your hands with vegetable oil. Cover the bowl with a towel or plastic wrap and place it in a warm spot for a while to let the dough rise, as chef Yevhen Klopotenko suggests.

While the dough is rising, peel the onion and chop it finely. Heat a pan with butter and oil, then sauté the onion until translucent. Add the minced chicken and, stirring constantly, cook until slightly underdone. Then transfer to a bowl.

Chop the tomato and bell pepper into small cubes. Add these vegetables to the minced meat and mix well. Finely chop the garlic and add it along with the chopped herbs to the filling. Season with salt and pepper to taste, pour in the lemon juice, and mix thoroughly. Grate the hard cheese.

Once the dough has risen, place it on a baking sheet lined with parchment paper. Flatten it into an oval shape and brush with oil and tomato puree. Evenly distribute the filling and sprinkle with grated cheese.

Bake the pide in a preheated oven until golden brown. Once done, sprinkle the dish with the remaining chopped herbs.
