Beef and vegetable roulade is a delicious and hearty dish that can easily adorn any festive table. The combination of tender meat and fresh vegetables makes it not only tasty but also nutritious. Ingredients:

  • beef – 750 g;
  • medium onion – 1 pc.;
  • oil – 20 ml;
  • carrot – 1 pc.;
  • sweet red pepper – 1 pc.;
  • tomatoes – 120 g;
  • salt to taste;
  • ground paprika – 3 g;
  • eggs – 3 pcs.;
  • oil for greasing the mold;
  • sour cream for serving;
  • herbs for serving.

Cooking method:

Grind the beef twice using a meat grinder. Peel and finely dice the medium onion. Sauté it in oil until translucent.

Add the peeled and grated carrot to the onion. Sauté the vegetables for another 2-3 minutes.

Dice the sweet red pepper and add it to the vegetables. Fry everything for a couple more minutes. Also, chop the tomatoes and add them to the pan. Sauté for another 3-4 minutes.

Let the cooked vegetables cool and add them to the minced meat. Also, add salt to taste, ground paprika, and eggs. Mix the mixture thoroughly.

Grease a loaf pan (12 cm wide and 6 cm high) with oil and place the minced meat in it. Bake the dish for 50-60 minutes at 180 degrees. Serve with sour cream and herbs.
