Udon with vegetables and chicken is a delicious dish of Japanese origin that combines soft wheat noodles, tender chicken fillet, and a variety of vegetables. It is the perfect choice for a quick and nutritious lunch or dinner, as it cooks rapidly while still being incredibly flavorful. The dish boasts a rich taste thanks to soy sauce and other aromatic seasonings.

Ingredients:

  • chicken fillet – 650 g;
  • mushrooms – 150 g;
  • udon noodles – 300 g;
  • grated ginger – 15 g;
  • carrot – 1 pc;
  • bell pepper – 2 pcs;
  • white sesame seeds – 1 tbsp;
  • olive oil – 20 ml;
  • soy sauce – 40 ml;
  • garlic – 3 cloves;
  • parsley – a bunch;
  • onion – 1 pc;
  • salt – a pinch;
  • pepper – a pinch.

Cooking Method:

Cut the carrot into strips, slice the mushrooms, and cut the chicken and bell pepper into strips, while finely chopping the onion and garlic.

In olive oil, sauté the ginger and garlic, then add the chicken fillet and fry until the meat turns white. Next, add the mushrooms and simmer everything together. Now, add the onion, bell pepper, and carrot to the pan, continuing to fry while stirring constantly.

While the vegetables are simmering, boil the noodles in salted boiling water for 8-10 minutes.

Add soy sauce, oyster sauce, spices, and sesame seeds to the vegetables, mixing well.

Combine the vegetables with the cooked noodles, simmer for another 2-3 minutes, and the udon noodles are ready.
