Wash, peel, and chop the beets and carrot into small pieces. Peel and chop the onion and garlic. Heat a deep frying pan with oil, sauté the onion and garlic, then add the beet and carrot pieces and fry for another 5 minutes.
Pour the sautéed vegetables with the broth, season with salt and pepper, bring to a boil, and cook covered on low heat for 30 minutes. Allow the dish to cool slightly.
Blend everything with a blender, add the cream, mix, and adjust with salt and pepper to taste. If the soup is too thick, add more cream. When serving, sprinkle with herbs.
